Sweet Corn Kurma/ Bhutta ki Kurma




If someone asks us what is your spouse's all time favorite dish. We might have many answers. But for me, the best answer would be any dish made out of sweet corn. He is so crazy of corn that he can have it in any sate.. hehe. So I kept on searching for recipes out of sweet corn and found this from a magazine. Here goes the recipe.

Ingredients :

Sweet corn Kernels – 2 cups
Red chilli powder - 1tsp
Garam masala powder - 2tsp
Mustard seeds - 1 tsp
Cumin seeds - 1tsp

To Grind :
Onion -  1 small
Peanuts – a fistful
Green chillies – 1
Chopped Ginger – 1tsp
Coriander leaves and mint leaves – ½ cup tightly packed
Grated coconut – 2tsp

Method :

  • Soak the peanuts for an hour. 

  • Later grind all the items under the "To Grind" list along with the soaked peanuts to a smooth paste.



 Heat oil in a pan and add mustard seeds. Let them crackle. Now add cumin seeds.


       

  • Once they are roasted, add the ground paste. Fry this for a couple of mins until the raw smell of onion goes off.Then add salt, red chilli powder and garam masala powder. Fry this for a minute.

  •  Cook the frozen corn kernels according to the package instructions. I heated them in the microwave for 5 mins.Now add the cooked sweet corn kernels. Mix them well in low flame and take them into a bowl to serve.




This can be had with Rice or any type of Indian bread varieties

My Notes:

I added frozen sweet corn kernels . We can also add the fresh corn directly or pressure cook the corn along with the cob and add the kernels.

We can replace the garam masala powder with Chana masala powder for a different flavour.
